Trying out all these new recipes has been a blast but a bit on the more-expensive-than-normal side. So last week was a make up week for overspending the rest of the month. It actually was pretty delicious. We still tried out new recipes- pork tacos, honey glazed carrots, and Panco chicken. When you have limited supplies you just (at least I do) make it up as you go so no recipes, sorry. Mallory wasn't such a huge fan of the tacos but was happy with the rest of the weeks menu. My favorite was the carrots. Yes, I did eat the tacos.
It was a busy week so I didn't get any photo taking in. Well, I did of the chicken and it was a great photo but I saved it as the wrong file type and can't figure out how to fix it. :)This week we tried a new mushroom bisque recipe from Food Network. I'm determined to find a winner. Pretty tasty but still now what I was looking for. I like my mom's mushroom chive soup better. Tonight we had a Mexican dinner that turned out delicious. I did some multitasking and made two new recipes at once. Not the best idea ever. Our poor guests (a.k.a. guinea pigs, a.k.a. Marianne, Austin, and Jenna) had to wait 45 minutes for dinner to be ready. I hate making people wait. Good thing the recipes were keepers. At least I didn't serve them a failed attempt after such a long wait. I did deliver you a failed photo though. Not looking so good there...
I made this Mexican Rice recipe and this Green Chile Chicken Enchilada Casserole recipe. The Casserole recipe that says "quick and easy"- not so quick when it takes 2 hours to complete but it is easy and doesn't have any crazy budget busting ingredients. I lot of reviews said it was bland so I added some sauteed onions and garlic as well as some extra seasoning. Austin suggested adding a little Pepper Jack cheese in with the Monterrey Jack. Oh yes my friend, I must agree that would be delicious. I'll be making both again soon. Yum!

ReplyDeleteThe recipes sound good! Mexican food is about all I can cook. My mother was Mexican and her Spanish rice was the best. She made it the way my grandmother did and so on...
Although this recipe looks good, honestly Spanish rice is very simple to do and this recipe calls for things that I have never put into it.
I don't want you to think that it is so involved. I throw everything into one pan after I brown the rice - onions, garlic, tomato sauce, water and bell pepper, S&P to taste and it comes out perfectly every time and I just give it 25 minutes to simmer.
Yum - I think I am going to make some right now. You've put me in the mood for Mexican food!
