Red Velvet Cupcakes

First off, thank you so much to Kira for posting yesterday! So cute and extra fabulous. She'll be posting whenever she gets a craft urge to help me keep the blog up and running with lots of cuteness and things to inspire. Kira is my sister and recently moved (what feels like) a million miles away. This site is one of the ways we keep in touch and its been so much fun to watch her get her craft on too. Thanks Kira!

Yesterday was my daughter Mallory's 4th birthday. We had two parties- one on my husbands side of the family and one on my side. We did things very laid back this year and let me tell you it was wonderful! I usually stress out and there was none of that this year. Only fun.

My daughter requested red cupcakes and she wanted to help. I should have taken pics of the cupcakes she frosted too. :( We were running out the door as we finished up and I never did. Sorry Mal!
I learned to use an ice cream scoop to fill the paper liners (my daughter picked super cool wanna-be princess ones) from watching Cupcake Wars on the Food Network. I do love the Food Network!
That's the birthday girl! If you ask her what goes into a recipe it's pretty amazing hearing her list of the ingredients you'll need. She's such a little baker and loves to help her mom.

Cream cheese frosting and strawberries (also requested by Mallory) to top them off.
They looked good and they tasted good. Anything smothered with cream cheese frosting is a hit with me. You can find the recipe for the cupcake and frosting here.


I have a craft date tomorrow and two more posts on top of that in the works so my lull is soon to be over. I'll try to be more consistent but life is hectic so no promises. :)
